
This is called “White Pizza” and it’s the only kind my family will eat!
1 pound pizza dough (store-bought or homemade)
2 tablespoons olive oil
3 cloves garlic, minced
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
1/2 teaspoon red pepper flakes (optional)
Salt and freshly ground black pepper to taste
Fresh basil for garnish
Directions:
Preheat Oven: Set your oven to 450°F (232°C). Place a pizza stone inside to preheat, if available; otherwise, a baking sheet will suffice.
Prepare Dough: On a floured surface, stretch the pizza dough to about 12 inches in diameter. Transfer it to parchment paper for easy movement.
Add Garlic and Oil: Brush the dough with olive oil, then evenly distribute the minced garlic over the top.
Mix Cheeses: In a bowl, combine ricotta, half of the mozzarella, Parmesan, thyme, and red pepper flakes. Season with salt and pepper.
Assemble Pizza: Spread the cheese mixture over the dough, leaving a border for the crust. Top with the remaining mozzarella.
Bake: Transfer the pizza (on parchment) to the preheated stone or baking sheet. Bake for 12-15 minutes until the crust is golden and cheese is bubbly.
Garnish and Serve: Cool slightly, then sprinkle with fresh basil. Slice and serve warm.

No Pizza Stone? Use an inverted baking sheet for a similar baking effect.
