Instructions:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the pumpkin puree, egg, and vanilla extract, and mix until well combined.
- In a separate bowl, whisk together the flour, baking soda, spices (cinnamon, nutmeg, ginger, cloves), and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Stir in the chocolate chips.
- Drop spoonfuls of dough onto the prepared baking sheet, leaving some space between each cookie.
- Bake for 12-15 minutes, or until the cookies are set and slightly golden around the edges.
- Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
