Homemade Lemon Meringue Pie


1. Preheat Oven: Set your oven to 350°F (175°C).

2. Prepare Lemon Filling
– In a medium saucepan, whisk together 1 cup sugar, flour, cornstarch, and salt.
– Stir in water, lemon juice, and lemon zest.
– Cook over medium-high heat, stirring frequently, until the mixture comes to a boil.
– Stir in the butter until melted.
– Place the egg yolks in a small bowl. Gradually whisk in 1/2 cup of the hot sugar mixture to temper the yolks.
– Whisk the egg yolk mixture back into the remaining sugar mixture in the saucepan.
– Bring the mixture to a boil and continue to cook, stirring constantly, until thickened.
– Remove from heat and pour the filling into the baked pie crust.

3. Make Meringue
– In a large glass or metal bowl, whip the egg whites until foamy.
– Gradually add the 6 tablespoons of sugar, continuing to whip until stiff peaks form.
– Spread the meringue over the lemon filling, ensuring it touches the crust edges to seal.

4. Bake:
– Place the pie in the preheated oven.
– Bake for about 10 minutes, or until the meringue is golden brown.

5. Cool and Serve:
– Allow the pie to cool before serving to set the filling and meringue.
