Divide the ground beef into 8 equal portions and shape each portion into a patty. Season both sides of the patties with salt and black pepper.
Preheat your grill or skillet over medium-high heat.
Cook the patties for about 3-4 minutes on each side, or until they reach your desired level of doneness. During the last minute of cooking, place a slice of cheese on top of each patty to melt.
While the patties are cooking, lightly toast the hamburger buns on the grill or skillet until golden brown.
Once the patties are cooked and the cheese is melted, remove them from the heat and assemble the double cheeseburgers.
Place a lettuce leaf on the bottom half of each toasted bun. Top with a cooked patty with melted cheese.
Add sliced tomatoes, onions, and pickles on top of the patties.
If desired, spread ketchup, mustard, or mayonnaise on the inside of the top half of the buns.
Place the top half of the buns over the assembled burgers to complete the double cheeseburgers.
Serve the double cheeseburgers immediately with your favorite side dishes.
